Where the Light
Meets the Treetops

Honeyshade takes its name from a peculiarly London phenomenon — the amber glow that filters through the ancient oaks of Hyde Park in the hour before dusk, casting long, honeyed shadows across the rooftops of Bayswater. It is that quality of light we set out to bottle.

Founded in 2023 by restaurateur James Whitmore and Executive Chef Elena Marsh, Honeyshade was conceived as a singular place: one that feels as alive at noon as it does at midnight. Not a rooftop bar that happens to serve food, nor a formal restaurant that tolerates an outdoor terrace — but something rarer. A room that breathes with the city below it.

The menu draws from the rhythms of the British growing calendar, interpreted through a lens shaped equally by the kitchens of Andalucia, the marché stalls of Lyon, and the market gardens of Kent. Simply put: the best of wherever the season finds us.

The Space

Floor Twelve,
Above the Park

Perched atop The Westbourne on Queensway, Honeyshade occupies the entire twelfth floor — a 4,200 sq ft space designed by studio Colbrook & Bell to feel both rigorously considered and effortlessly alive. Floor-to-ceiling glazing gives way to a wraparound open-air terrace on three sides, with uninterrupted views across the treetops of Hyde Park to the south.

The interior moves between warm oak joinery, aged brass, and custom hand-thrown ceramics — materials chosen to age gracefully alongside the restaurant itself. The mood shifts with the light: the room that greets a long Sunday lunch is not quite the same room that closes at 2am on a Friday.

How We Work

The Principles Behind
Every Plate & Pour

Three commitments that guide every decision we make, from the supplier we choose to the glass we set down.

Seasonal, Always

The menu changes entirely with the seasons — not as a nod to fashion, but because the best ingredient in any month is the one nature intended for it. We work with a tight circle of British growers, foragers and smallholders whom we visit personally, and our kitchen adapts around what arrives each morning.

People First

Every supplier we partner with shares our conviction that the people who produce our food deserve dignity, fair pay and a sustainable livelihood. We hold long-term relationships with our producers — many are on first-name terms with our kitchen team — because trust and continuity produce better food than a race to the lowest price ever will.

Considered Hospitality

Service at Honeyshade is warm without being performative, knowledgeable without being didactic. We train our team to read a table rather than recite a script — to understand when a guest wants to linger over a story about a wine’s origin and when they simply want their glass refilled promptly. The best hospitality is invisible when it’s working.

The People

The Faces
Behind Honeyshade

A small team with considerable conviction, united by the belief that extraordinary hospitality is a daily practice.

Portrait of Executive Chef Elena Marsh — professional, warm, editorial quality

Elena Marsh

Executive Chef & Co-Founder

Elena trained at Le Cordon Bleu London before spending a decade across Michelin-starred kitchens in San Sebastián, Lyon and Shoreditch. Her cooking is rooted in classical French technique, loosened by years of market-going in southern Europe. At Honeyshade, she leads a kitchen that she describes as “organised chaos in pursuit of something beautiful.”

Portrait of Restaurant Director Thomas Aldridge — professional, poised, editorial quality

Thomas Aldridge

Restaurant Director

Thomas spent fifteen years in London’s most celebrated dining rooms — including eight years as General Manager at a two-Michelin-star restaurant in Mayfair — before joining the Honeyshade founding team. He sets the tone and temperature of every service, and is the reason guests almost never notice how much effort goes into making things look effortless.

Portrait of Head of Bar Niamh Callaghan — creative, confident, editorial quality

Niamh Callaghan

Head of Bar & Cocktail Programme

Niamh brings a background in botanical perfumery and fine wine to Honeyshade’s drinks programme. Her cocktail list is built around apiary ingredients, foraged botanicals and rare spirits sourced directly from small producers — an extension of the kitchen’s philosophy into a glass.

★ ★ ★ ★ ★
The Evening Standard

“Elena Marsh’s cooking is quiet and precise in a way that rewards attention. This is serious food served without any of the usual self-seriousness.”
